Here is a digest from a Mass primer. When performing the sacrifice of the
Mass, the priest wears the following:
Amice - a white linen cloth, tied at the neck and around the waist, to
symbolize the spiritual helmet and, according to some, the shroud of Jesus
Christ.
Alb - a white linen vestment reaching to the feet, to symbolize innovence,
justice, and the white vestment worn by Jesus when he was sent back from
Herod to Pilate.
Cingulum - a belt, worn around the alb. Symbolizes chastity, and also the
ropes used for scourging Jesus.
Maniple - a strip of fabric in the liturgical color of the day, worn on the
left arm. Symbolizes zeal, good works, penance.
Stole - a long strip of silk of the same color as the chasuble, worn around
the neck and crossed on the breast. Symbolizes immortality and sanctifying
grace.
Chasuble - sleeveless vestment worn over the alb. Symbolizes the yoke of
Christ.
