Chris Cutler's _File Under Popular_ (Autonomedia, in print) is
undergrad-readable and contains a substantial section comparing the
organization and structure of a symphony orchestra (incl. the composer)
to the industrial model.
There's also an article in the current New York Review of Books (cover
date 12/20/01, I think) entitled "The Future of Music" that you might
find useful.
