I'm sure other people will have pointed you at Learning Through Landscapes
(http://www.ltl.org.uk/). I was involved in schools grounds stuff in the mid
to late 80s. Their publications were far and away the best I could find at
the time - with a fair number of case studies and very inspiring. They were
very into student involvment. I've not really been involved since then, so
can't speak for now.
Reports from local projects co-ordinated via local organisations might be
fruitful at a practical level e.g. Wildlife Trusts (Avon is an example

tm) who have been doing work for years and will no doubt have lots of very
down to earth details - though probably not with an academic perspective.
I've heard of consultants (but don't know any personally) working in this
area. They are likely to have to produce reports on their work, inc.
approaches to student involvement... if you think (as I tend to) as people
as 'literature' in this kind of context then talking to them might be
useful.
I don't have any references at hand but there must be lots of literature
around the 'Planning for Real' approach to community involvement too (which
I know is used a lot in this type of work...).
My son's primary school has a 'school grounds group' who have been going for
a fair while now ~ year or so. They got advisory support from the local BTCV
via a grant. (It was BTCV that I worked for in this area originally.) That
group alone has 3 people in it who did this kind of work in 'past lives'.
There will be massive amount of distributed knowledge/expertise dating back
decades, if those involved 'back then' could be found, interviewed etc...
The old Comumity Programme (CP) funding, funded a lot of work in the 80s.
Perhaps there are reports from that work?
My guess is that as in so many areas of human endeavour, people doing the
work on the ground; worked locally, thought lots, did lots, relflected lots,
changed their practice lots and wrote very little about it.
