there are a few short field trip descriptions in:
TrümpyR., Homewood P.W., Ayrton S. (eds.) 1980. Geology of
Switzerland; a guide-book;Part B: Geological Excursions,
Schweizerische Geologische Kommision,
Wepf & Co. Basel
Unfortunately, the nicest field guide is published in German only. It
contains a simplified Geological map of the area, a brief
introduction to the most common rock types and seven tour
descriptions.

You can get this small booklet at the Alpine Museum in Zermatt.
Recently, revised geological maps of the area were published by the
Swiss Federal office of Topography:
