Dear Mark,
The woman on the painting doesn't look to me as a nun at all. And if she is,
she must be some Canoness belonging to the high nobility.
The standard work on medieval monastic vestments is still: Pierre Hélyot,
Histoire des Ordres monastiques, religieux et militaires, et des
Congrégations seculières (...), Paris, 1731 (I think 7 or 8 vols),
reprinted by Migne in the 19th century. A colleague of mine recently wrote
