I wouldn't call it an authoritative source, but the following little
volume has weights and withers height for some, but not all, of the
breeds discussed in it:
Alderson, L. 1976. 'The Observers Book of Farm Animals'. London,
Frederick Warne.

There was a suggestion that the size of the major stock animals at that time could be compared with their size now. Basically superimposed silhouettes of the average size of Roman and modern animals. Here referring to cattle, sheep and pig. But I've had some trouble finding any dimensions concerning modern livestock, other than extensive lists of weights. Obviously there is a great difference in size within the various modern breeds. What I'd like are perhaps the range of sizes for some well known breeds, and then come up with an average figure. Can anyone out there help?
