Thank you all who sent such interesting information about sea
urchins.
Throughout Chile, we eat the orange parts of Loxechimus albus (but I
have not seen this anywhere else). I find them very tasty and miss
them a lot!. We eat them raw on lemon juice and also on omelette
types 'tortillas'.
