I have found the best method is to bring the final recording into
iTunes and then set the tags directly in there by right clicking and
show info. That way you know it is optimised for the most common player.

Yeah, I have had a number of people from the list email me directly
and most have only done "one off" shows rather than a regular series.
This surprises me to be honest as there is such a large audience for
this out there. For example last month my podcast on web design was
downloaded over 75000 times and each episode is downloaded by
anywhere between 6000 and 15000 unique users in its first week online.
I could imagine a weekly podcast would be a superb marketing tool for
prospective students who are going through the selection process of
going to university. You should have student testimonials, student
bands planning and loads of good stuff. What is more most
universities have the mechanisms to do this in the form of student
radio.
