Why not ask them? i.e. interview them, before and after this intervention. There would be no more direct way to test verbal skills. It seems to me that some of the things you want to measure are very contextual and so a universal scale would be of limited use e.g. familiarity with domestic items, food, environments. I think it would be cumbersome to try and develop scales for all these things, or at least very limited without being backed up or informed by contextual interview data. You could speak to the children as well as volunteers.
