I haven't yet come across any demographic research into Geography Students
specifically. However, for background research and insights I found the
following very useful and informative:

Diane Reay, Miriam E. David, Stephen J. Ball
If you do come across some geog specific data/research I'm sure many
Critters would find it interesting.
