I've investigated a few abattoirs and they have all been largely unremarkable - I terms of specific stuff that is different from other sites - the drainage system is the thing to look out for as any effluents would have gone down the drains so leaks into the surrounding land might be an issue.
If the site is old it may have had a disposal area for anthraxed cows, I did a site once that had a landfill next door that contained rather a lot of bones; discussions with vets and public health at the time led us to believe that there were no realistic risks remaining from anthrax or other pathogens given the time period - you'd have to be mindful of what you intend doing with the site I guess.
There might be a few blood tanks under the slab, they sometimes have paddles in them to stir the contents.
