Julian, it wasn't supposed to be a real joke...to be a biomimetic joke the Shinkansen would have to say something about its natural inspiration, not the other way around. That said, at https://www.birdfan.net/fun/etc/shinkansen/ the original design leader of the 500 series Shinkansen goes into great detail about his design process and inspiration.

Acceptance of this as a joke (sorry - I didn’t laugh . . . ) depends on whether you can believe that the shape of the kingfisher’s beak has anything to do with the shape of the front of a shinkansen. Since I think that this is a totally made-up story (I can find no documentary evidence - the work on model shinkansens was done in the 1990s) then the simile loses its impact (now THAT is a joke!).

Thank you!
I consider this the first biomimetics joke (I know).

Here, I just made one up for you.
What did the kingsfisher’s prey say to the kingfisher?
You hit me like a bullet train.

Dear All,
I just wanted to conclude on the joke question: So far there are no biomimetics jokes (in a narrow sense) known.
However, I will motivate students and others to come up with the FIRST one.
Kind regards,
Manfred

Actually the title of one of my papers is a bit of a joke - or at least a play on words: “Survival of the cheapest”. Not a belly-laugh, though. And a paper on the feeding behaviour of grass carp was sent back with the request that I give it a better title, so I gave it the silliest one I could think of, which (surprisingly) was accepted: “How the grass carp chooses and chews its food - some clues”.

Dear All,
I wonder if there are any biomimetics jokes around? I know none, but please help me out on that matter if you can.
This question is not a joke. Many scientific disciplines have their one jokes. Some jokes even compare various disciplines. The precondition for good jokes (that are really witty) is, that a level of reflection is reached that goes beyond conventional science conversation; considering things from a fresh point of view.
Jokes are so serious that even Sigmund Freud wrote a book about them.
Kind regards,
Manfred
