Speaking as a person who likes shiny demos rather than as a person who builds them, my absolute favourite demo for light/sound is the Rubens' tube, otherwise known as that cool flame tube everyone brings out. I think it's absolutely wonderful.

It's also possible to build small light-based theremins out of arduinos, raspberry pis etc where the pitch changes as light levels change. You can find a guide here: https://learn.adafruit.com/adafruit-arduino-lesson-10-making-sounds/pseudo-theramin They're easy to build and incredibly fun to play with. Light harps work on a similar principle and are visually stunning.

I hope that helps - and I'll keep picking my brains to see if I can remember other demos I particularly liked.
