medieval-religion: Scholarly discussions of medieval religion and culture

Dear learned friends,
Somewhere I read that the Carthusians, because they were strict vegetarians, had the problem that they therefore accumulated no animal skins and thus had to request parchment from far and wide, successfully.
Has someone a hint, where this (as I presume) legend could come from? I had this notice for a long time, but lost the evidence, where I did read it!
