Does anyone know of a book that would tell me which (or how many)
churches in England were dedicated to SS Peter and Paul?

I'm afraid you will probably have to work this one out manually. Your
starting points are F. Arnold-Foster, Studies in Church Dedications
or England's Patron Saints, 3 vols. (London, 1899) - badly in need of
updating - and A. Binns, Dedications of Monastic Houses in England
and Wales, 1066-1216 (Woodbridge, 1989). Alison Binns' book counts up
the numbers of dedications, but it only deals (as the title suggests)
with monastic houses. Also I think she excludes nunneries, which I
think you will need to look up in Sally Thompson's Women Religious
(Oxford, 1991).
Another problem is that dedications sometimes change. You can get
some idea of the complexities by looking up Winchester Old Minster
(the cathedral) in Binns.
But if you find out how many churches in England were dedicated to
Sts Peter and Paul, do tell the list, as it is a matter of general
interest.
