George,
Though not dealing exclusively with saints, "The Gothic Idol" by
Michael Camille is an excellent survey of the medieval ideas about
imagery, and how it was used for religious and political purposes. It
contains fascinating information on a variety of subjects, including
the so-called "idolotry" of the Jews and Muslims, as perceived by
Christians. It's also good as a bibliography.
