Dear Simon,
Feast days for saints could vary greatly according to diocese or
geographical area. Dates for these feasts tended to be traditional; but
with the establishment of formal papal canonization from the twelfth
century onward, the date of the feast would be specified in the
canonization bull (although even *these* dates were changed, when they
conflicted with other, pre-existing local or regional cults).
