Last Saturday, when I posted a response to Meg's query about Greek prayers for the blessing of holy water, I garbled what I had to say about the Barberini Euchologion, the oldest existing version of the (Great) Euchologion, the principal collection of the prayers of the Greek church and one that has grown over time (there are of course lesser euchologia as well, just as there are dictionaries of the English language in different sizes for different audiences). What I meant to say, but did not, is as follows:
For a version of the Euchologion the entirety of whose contents are certain to have been used medievally, see this modern critical edition (with a translation into Italian) of the later eighth-century Barberini Euchologion (BAV, codex Barberinianus graecus 336), Stefano Parenti and Elena Velkovska, eds., _L'Eucologio Barberini gr. 336_, 2a. ediz. riv. con traduzione in lingua italiana (Roma: C.L.V.-Edizioni Liturgiche, 2000; Bibliotheca "Ephemerides liturgicae." Subsidia; 80). As one would expect, its prayers for the blessing of water are to be found in its coverage of the baptismal rite.
More on various versions of the Euchologion, esp. with regard to their reflection of Constantinopolitan or, in some cases alternatively, Palestinian praxis will be found in chapters One and Two of Nicholas E. Denysenko's 2008 Catholic University of America dissertation, _The Blessing of Waters on the Feast of Theophany in the Byzantine Rite_. It doesn't appear that Franz does anything with medieval non-Latin Christianity.
As a generality, in eastern rites the prayers for the blessing of holy water are part of the baptismal rite. You might find specimens of what you're looking for in E. C. Whitaker, _Documents of the Baptismal Liturgy_, revised and expanded edition by Maxwell E. Johnson (Collegeville, MN: Liturgical Press, 2003).
In the Byzantine Rite there are two Blessings of Waters, a Great(er) conducted at Theophany and a Lesser conducted according to need throughout the year. This Wikipedia page both provides useful context and gives a modern English translation of the petitions sung in the Great Blessing of Waters:

These texts are part of the Euchologion, the repertory of the services and other prayers of the Greek church. Not surprisingly, this compilation has had accretions over time. Its early modern edition by Jacques Goar, OP (_Euchologion, sive Rituale Græcorum_, 2nd ed., Venice, 1730) is a synthetic edition whose notes also contain additional prayers, some of which are certainly medieval. It provides a facing Latin translations. Here's a link:

In the Alexandrian Rite (used in the Coptic Orthodox Church and other churches in NE Africa) there is a Blessing of Waters in the so-called Euchologion of Serapion of Thmuis (4th cent.; the accuracy of the traditional attribution to Serapion / Sarapion is doubtful). It should be found in Maxwell E. Johnson, ed., _The prayers of Sarapion of Thmuis : A Literary, Liturgical, and Theological analysis_ (Roma: Pontificio istituto orientale, 1995; Orientalia Christiana analecta; 249).
For other eastern churches, you might find pertinent material (or references to the same) in Gabrielle Winkler, "The Blessing of Water in the Oriental Liturgies," _Concilium_ 178 (1985), 53-61.

Meg, I suppose I always say the same thing, but I think a useful first step is usually to check the French mega-encyclopedias, where there will often be a long and thorough historical treatment, even if dated and needing to be supplemented by more modern work. The great advantage is that they aim at a systematic coverage, whereas much modern scholarship is very specialised and therefore fragmentary (with exceptions, of course).
For liturgical blessings I would check first Dictionnaire d'archéologie chrétienne et de liturgie (30 vols in 15, 1903-53). It can be supplemented with the Brepols Dictionnaire encyclopeìdique de la liturgie (2003), where there is an article by Manilio Sodi on "Bénédiction", or the various one-volume dictionaries like The New Westminster Dictionary of Liturgy and Worship (1986), but they are rarely given to intricate historical detail like the old works. In German there may be something substantial (I have not checked) in Theologische Realenzyklopädie (1976- ), or the older Reallexikon für Antike und Christentum (1950- ).
A. Franz, Die kirklichen Benediktionen im Mittelalter (2 vols, 1909) is perhaps the "weighty German tome" you mention (1500+ pages), to be loved or feared, depending. I'm not sure of its coverage of the Greek tradition. -- Paul

Thanks to all who responded to my earlier request regarding Holy Water and Chrism. My students were most interested in the detailed exorcism of the water - and the salt! However a Greek Orthodox friend raised the issue of how far back this goes (apparently it is not done today). I´m guessing that probably it is there in the early church (I have found Greek examples of other things she has scoffed at), but my Greek is pretty much non-existent. Does anyone on the list know of Greek rituals for preparing holy water and/or baptismal water that are accessible in English (or German, or French. I could probably plow my way through Greek with a translation on hand.) I´m not just interested in water, though, and am wondering if there is perhaps a weighty 19th century German tome on the history of liturgical blessings? Of course I´d be delighted to learn of something more recent, and in English, but the Germans seem to have done a lot of the spadework that has not yet been superceded.

Chrism was consecrated by the bishop at the chrism mass on Holy Thursday & distributed to the parishes. You should look at Powicke & Cheney, Councils and Synods, vol. 2 for regulations concerning this.
Regulations for the safe keeping of the Eucharist also are concerned with the keeping of chrism. Some of the relevant regulations are translated from Lynwoode's Provinciale in in Lyndwood’s Provinciale…., ed. J. V. Bullard and H. Chalmer Bell (London: Faith Press, 1929), esp. pp. 12-13 Archbishop Pecham's Cum sacri.

As I recall, Miri Rubin's Medieval Christianity in Practice has a chapter or two on baptism and I think a discussion of godparent roles. (the book is a sourcebook with primary sources and couple page scholarly discussion following each selection)

You can find a translation of the Sarum Baptismal Rite in E C Whitaker, "Documents of the Baptismal Liturgy", Third edition edited by Maxwell E Johnson, London, SPCK, 2003, chapter 14, including the godmothers being enjoined
