medieval-religion: Scholarly discussions of medieval religion and culture

On behalf of a colleague, I'm enquiring about bibliography, especially in the Greek area (the starting point is ancient Greek myth and ritual) of continuity of both ritual and "figures" from the pagan period into Greek Orthodox Christianity. In the latter area I'm sure she is thinking about things like Perseus and St. George. It occurs to me that burial practices probably show a good deal of continuity. But I know of no literature about either to which to direct a student. Any suggetions? Although the specific query was about the Greek end of the Mediterranean, I'd be interested in evidence for continuity in other places as well.
