Thank you for asking that question. As you say this is sometimes a tricky area. That you have come here for advice is a sign of progress.
If you cannot find a single document with guidelines that you can borrow, you could just look at some of the ads that have appeared here and elsewhere about interns.
For example, New Scientist has run internships, although I don't know if it still does so. On the media front in general there is always the NUJ.
You might do better, though, to look at organisations in the same business as your organisation.
Avoid sectors where the behaviour is dreadful such as fashion, where, for example, the saintly greener than though Vivienne Westwood's fashion house comes in for regular stick in Private Eye for hiding profits offshore and treating unpaid interns like dirt. Or maybe the eye has just got it in for her.
