something like this should work, though I haven't tested it:
Vi=spm_vol('myimage.nii'); %input header
M=spm_read_vols(V);
Vo=Vi;%copy input for output
Vo.dt=[16 0];%change data type
Vo.fname='myimage_new.nii';
spm_write_vol(Vo,M);
