Hi Tom,
We've used VLC to record our screen. It's not as easy or as good quality as QuickTime but was the only thing I could find that worked on Windows and was free. It records your whole screen whereas with QuickTime you can choose what section of your screen it records, so you have to make sure everything you don't want recording is hidden! (Or use video editing software after)
