Hi Alec
The decision about which host is pretty much dependent on what the
actual thing is, what maintenance is required, etc. Same for whether
you'd look after it direct or get a company to do it for you.
When we build sites for people we always make it clear that they can go
and host elsewhere (and probably do this more cheaply than hosting with
us) - 99% of the time though they chose to host with us. But - the
specifics in this case are that we host WordPress, and look after the
maintenance, updates, backups - and also know WordPress inside out. If
someone had say a Drupal instance we'd recommend someone else purely
because it's not our bag.
In terms of specifics - Vidahost. UK based cloud hosting, excellent
service, superb control panel, amazing support. I've tried so many other
hosts in my time, from Rackspace to MT to local teeny ones - none even
come close.
