You could make sure the lists are unpublished, that's the only other way I'm aware of.

Subject: Bulk roll-over - excluding lists?
Hi all,
Can anyone tell me if there is a way of excluding a list from a bulk rollover to a new time period?
We're investigating time periods and I wanted to know if this was possible. I understand that by removing a time period from a list this would exclude it, but are there any other options?
Thanks in advance,
Sally
