From experience I suggest considering the following although it will depend on the foods being tasted;
Allergies to foods is an obvious one
Diabetes (I used to be amazed how many diabetics applied to be chocolate tasters)
Cardiac problems - particularly when tasting caffeine based products like coffee
Oral hygiene - I have read evidence on the correlation between wine tasting and erosion of teeth, would also be an issue with tasting acidic fruit juices/products. I'm sure there are others but these are the ones that come to mind.
