+1 to Mia and Mike's comments
I think for each of the areas you outline in the post (Venue, Services/Facilities, Collections Information) we could try to answer the questions:
1) Can this be done with schema.org as it is, and if so what does it look like (example markup)?
2) What cannot be done with schema.org and why (i.e. what is missing)?
3) What is the likely impact of adding the markup in terms of immediate benefit?
4) If the answers 1-3 suggest there would be benefit to extending schema.org to cater for some museum information, then how should this be done?
1) and 3) are basically - what can we do now and what would be the benefit
2) and 4) are basically - what might we do in the future and how do we get there
To share some experience from libraries, there has been some work on 2 and 4 for libraries through the 'Schema Bib Extend Community Group' http://www.w3.org/community/schemabibex/wiki/Main_Page - which has led to some proposals to add new elements to schema.org via the W3C public vocabs list (http://lists.w3.org/Archives/Public/public-vocabs/) - and has influenced the development of schema.org
However I think what this activity has missed (IMO) is the more immediate benefits that might be realised - which is why I want to emphasis Qs 1& 3 here
