For deciding which tech adopting, I would say: it depends.
For example, the Ancient Coin Gallery at the Museum of Fine Art in Boston integrates some iPad in the "information space" of the overhaul gallery. http://www.mfa.org/collections/featured-galleries/michael-c-ruettgers-gallery-ancient-coins
In my opinion, the tablet works particularly well in this project since it is used "only" for its main characteristics (PRO) of interactivity, pan/zoom, resolution. Here, the iPad is part of a more complex information environment constituted of labels, a map, objects, etc.
However, I agree with you that a CONS in using ipad is to convey to much information through a relatively small screen.
So, coming back to your email, in my opinion the "information context" should be one of the early think to consider in order to lean toward one tech or another. It is about the information design and not the technology itself.

Hello,
I'm not sure how many 'exhibitions' people are on this list but does anybody have any opinions on using tablets in exhibitions vs. a more traditional touchscreen?
What are the advantages/disadvantages of using 19" tablets to deliver content (text, images and video). vs. a say 32" touchscreen? I am wary of going small when it comes to accessibility (both text size and for usability) but I'm sure there must be advantages (cost?) [Talking here about fixed location tablets, not mobile].
Also, has anybody used them in your museum or seen any anywhere? I keep being told about the V&A furniture gallery but anywhere else??
