I’m not sure if it’s relevant to what you’re looking for but in early Irish literature the tale of Mac da Thó’s Pig has as its central theme the division of a pig, though this is named for the owner, rather than with an individual name. An example of an individually named pig would include Triath, a boar associated with Saint Brigid.
In Welsh literature the figure of the boar Trwyth and the sow Henwen are two named animals.
