Thanks for the suggestions (WY editor, TinyMCE). Our partner College that we are merging with in a fortnight uses CKEditor (in Joomla, I think) and I've heard no objections, so we'll go with CKEditor (to edit course descriptions and such), and evaluate others once we're past the merger.
We will also be using Moodle, which I believe has TinyMCE as default, although you might be able to replace it with another, perhaps a HTML5-producing one <https://moodle.org/plugins/view.php?plugin=editor_contenteditable>.
