I would suggest a sensible answer might be for a month. Then you add a
current sheet at the front and take one from the back. That then keeps the
records managable

Is that not the actual mechanics of the program though?
e.g. food must be temperature tested at certain times etc..
Sorry to be pedantic but I have a built in alarm for keeping stuff
longer than practically (and legally) necessary. Seems to me records of
food temperatures only need to be kept for the duration of any potential
illnesses from dodgy food (i.e a week at most) unless you wanted to keep
records for statistical purposes that show the efficiency of food being
delivered hot to the table?

The organisation that I work for provides food for 'vulnerable people',
including old people and young children. We are required to meet these
standards:

We are required to keep the records of the program for 2 years.
