From experience every case I have ever seen is different and depends on the underlying psychological reasons for the eating disorder. I have had some cases who have managed it very well but in times of overload or adverse events tend to become controlling about their eating pattern to the detriment of their health. It may be that she has already had treatment and you are seeing a relapse.
NICE guidelines are attached and something I have on fitness to teach which mentions it (slightly odd advice I thought) - there may be an updated version so best check the education.gov website.

Hi
I have been asked to assess a teacher who has anorexia. Her performance is being affected currently. Have not yet got the details of what they are asking for or specifics aobut her performance, but anorexia is not an area I know much about so am asking for your wisdom. I guess my main question is:
What are the main considerations for assessing a teacher with anorexia? How long is it reasonable to expect an employer to wait for therapy to have an affect and then be able to expect an improvement in levels of performance.
