I have, on our test SE. It's slightly less faffy than doing the head
node, mainly since the things that tend to break on the head are
publishing and the like.
The key things to worry about are making sure to completely remove the
glite RPM before installing the EMI/UMD rpms - if you have a build
system and configuration manager for building nodes of a specific
type, this will probably take about the same time, so there's the
question of whether you save any time in doing it the fiddly way.
(You *can't* do it without the disk server being out of communication
for at least the time needed to remove the old packages and add the
new ones.)

Reinstalling is the "recommended" way to move most services to EMI
from gLite, currently.
