Perhaps not quite so 'under attended' as you say. In fact Hans Reinders book The Gift of Friendship gives a detailed account of theology and disability, particularly learning disabilities. Whatever its merits for secular people the book is thoughtful, rich in arguments and reflects the enormous amount of work already done in this area. It's an engaging read too as always with his writings.

I was forwarded Jen's email suggesting a disability/theology discussion....thanks Jen. I think this is a wonderful idea. My background is Eastern Christian and I am a theologian. I think the question of disability in theology generally is much under attended to, so developing a network like this is invaluable.
I would also suggest that there is much to be mined within various religious traditions, which goes beyond sacred texts which could be of benefit. There are many sources that could be attended to: reflections of human personhood; within Christian theology the notions of creation in the image and likeness of God; Hebrew purity laws which did not conform to our notions of disability (distinctions between visible and invisible); initiation rites and how they dealt with people of differing abilities; and many more.
