Although the ICA algorithm MELODIC uses is indeed stochastic, I think the
"probabilistic" is to distinguish MELODIC from noise-free ICA models. Read:

The "probabilistic" nature of MELODIC is a good thing because it allows for
mixture modeling and so forth.
