Lindsay,
With this set of machines, I would consider making a grid from your
Linux machines. NeuroDebian is a good choice which we use here, but
applications such as FSL are natively installed locally rather than on
an application server. This entails a bit more administrative work in
keeping all machines up-to-date, but we have not found this a
prohibitive use of time. I would dedicate your Xservs to serving files,
possibly using Parallels or VMWare to create some virtual compute nodes
running Debian.
I am not sure how using an Xserv as an X11 client with your local Linux
workstation as the X11 server would work, but given the Darwinized
nature of OS X apps, I would not expect much success. If you want to use
the Xserv as a application server, first install the Linux distribution
to a Linux machine, generally to /usr/local, then rsync to the server.
You will then have Linux binaries on your OS X server which can be
shared to your Linux workstations via NFS.

We have 2 Mac Xserv servers which contain all of our data, as well as our software applications. Most of the computers that are attached to these servers are Linux workstations running either CentOS 5.3 or 5.4.

For instance, tbss_2_reg pops up a GUI window instead of simply running from the command line as we would have expected, and we cannot get the script to run properly at all.
