Good points [and there is evidence for that in Chester], but in addition
the (Edinburgh) knife marks described by Jennifer (on the acetabulum and
the femur head) could indicate dismembering of the carcass as she
suggests.
and
(Jennifers email) "Some femurs have a series of small, parallel knife
marks on the mid-shaft." - Could perhaps relate to filleting.

Has anyone considered the possibility that if the dogs had been skinned
the skins were being used for gloves? I seem to remember that
inventories of glovers in the 17th C have included dog skins.
