Imitating priestly practice in the Temple, perhaps? The Holy of Holies was curtained off because there the priest was understood to be in the presence of God. 'And the veil of the Temple was rent in twain.'

In the Orthodox church, everything the priest does in connection with
the eucharist is hidden behind the iconostasis, invisible to the
congretation.

Whyever not? What is there about the process of installing relics that
would need to be hidden from public view?
This must have seemed reasonable to those in charge at the time, but I
have trouble imagining the need for such concealment.
