Just to say that we have done this with DSpace here at Stirling. We added a "Contact Email" metadata field to records and have linked this to the "Request a copy" functionality - when an embargoed item is requested, if the Contact Email field contains an email address, this is used for the request, otherwise the email address of the original submitter is used. If an author leaves the institution, they can let us know a forwarding email address and we will update the Contact Email field for their items as required.
As an aside, we also do both "proxy" depositing (where a departmental admin deposits for an author) and a small amount of "mediated" depositing (where library staff do the deposit) - as the Request a copy function uses the Submitters Email address by default, the use of the Contact Email address field can be used to avoid proxy/mediated depositors receiving the requests, ensuring they are sent to someone who is authorised to supply a copy.

(1) For retrospective deposits, when authors have nothing left but the
publisher's PDF, deposit that.
(2) The Button can be used to provide eprints of that just the same/
(3) For current work, deposit the author's final draft, immediately
upon acceptance, while it's still at hand!
