There's one in Gorambury, near St Albans:
Locker, A. (1990) "The mammal, bird and fish bones", in D.S. Neal, A. Wardle & J. Hunn. Excavation of the Iron Age, Roman and medieval settlement at Gorambury, St Albans. English Heritage report No. 14. ISBN: 1-85074-250-2. pp.205-210.
The other villas I have in the bibliography are rather small assemblages and/or summarily reported, so I doubt they'll be of use to you. Let me know if you want them anyway.

Subject: Roman Villas
I have another plea for help.
I am looking for compartive animal bone reports for Roman Villa sites. The site I am currently working on is from Nottingham, but I have a Lincolnshire site also looming on the horizon.
I would be greatful for any references anyone can give me. The closer to the Midlands the better.
