Hi Scott,
in a recent project for the Wedgwood Museum, we got round the
necessity to ask visitors to input their email address, which requires
quite a lot of extra effort, such as a keyboard (physical or on-
screen), a mail server and so on.
In the museum, visitors can have their picture taken and automatically
converted in a 'portrait medallion', which is coherent to the content
of the Museum itself. This seems similar to what you are planning to do.
Instead of asking the user for their email, we tell them to go on the
website the following day. There, they will find all of the pictures
that were take, organised by day and time.

This system may not be appropriate if you are concerned about public
display of the images, but it has been quite successful in what we had
intended to do, so it may give you some ideas.
