We are using Wetpaint for a private wiki to support a skills development
programme for Renaissance East Midlands. It's quite easy to use and seems
pretty good for its purpose.
There's a useful guide to wikis at

good tips on using web 2 in schools.)
Probably more important than what tool you use is how you encourage
contributions. It's early days for us, but we could share experience on
this later on.
I also looked at Basecamp, PBwiki and Wikispaces - some of which are free
only to education or below a certain number of users. Wetpaint seems much
easier to use than SeedWiki, which is the other system I've used.
Oh and beware: they're addictive...
