There should be a way of disabling the airbags quite simply. The passenger side
one is usually disabled by a switch because of the danger to babies. That
should be clearly shown in the handbook for the car. On the driver's side, the
airbag can be made inoperable often by removing a fuse. I'm involved in
motorsport, and airbags are disabled routinely to prevent them going off at the
wrong time. Alternatively, the steering wheel can be replaced with an
aftermarket one. I'd suggest contacting a motorsport engineering company for
more advice (I don't know what area you are in, so can't help specifically).
