I agree with Daniel's call for a wider view of the potential for design education. Although I have many quibbles with it, my own “Graphic Design as a Liberal Art” (Design Issues vol. X no. 1, Spring 1994; reprinted: The Education of a Graphic Designer, ed: Steven Heller, also reprinted: Looking Closer 2: Critical Writings on Graphic Design, ed.: Bierut, Drenttel, Heller, Holland) is one of several articles that have suggested this with various degrees of possible separation from training for a current vocation.
It is important, however, to deliver on promises. In my experience, most design programs sell themselves to students and parents by stressing immediate employment possibilities. Leaving a variety of paths open for students and opening up new possibilities are ethical imperatives but delivering on promises is, also.
