Just a note: papain actually comes from papayas and bromelain comes from
pineapples, another commonly used proteolytic enzyme used in transfusion and
cookery is ficin which is sourced from - you guessed it, the fig. You might have
noticed that the name of the enzymes is derived from their source bromelaine is
known as such, because the pineapple is a bromeliad.
