Hasok Chang in Science and Technology Studies at UCL runs a course in which undergraduates do original historical research, which is passed on to the next year's group and so improves/accumulates over several years.
He and all the students have just published a book on the history of chlorine which shows how well this can work. It is a great example of university teaching as shared inquiry - an ideal which is hard to achieve!
