As far as I know, in spm5 the voxel size will be determined from the
priors you used, which normally come at 2x2x2mm. If you want to have
higher resolution (at the cost of 8 times the image size!) you can try
the VBM tools from Christian Gaser at http://dbm.neuro.uni-jena.de/vbm
Another way would be to only write the segmented images in native space
and then to normalize them "by hand" (then your settings adapted above
will take effect) but the toolbox is much more convenient and probably
more accurate, too :)
