This isn't a textbookm but Denis LeBihan wrote an excellent review of
diffusion MRI in Nature Reviews Neuroscience

and there was an excellent special issue on diffusion in "NMR in
Biomedicine" in 2002 (vol 15) with contributions from lots of key names
in the field.
