If you want to try a demo implementation of a shibb origin then you may be
interested in the Gaun Xi project (pronounced Gwan Chee) (guanxi.uhi.ac.uk /
http://sourceforge.net/projects/guanxi/).
As part of this project we have turned the Bodington VLE into a shibboleth
origin and written our own (improved) shibboleth implementation. This set-up
works 'out-of-the-box' and is an ideal way of have your first play with
Shibboleth. It also gets around some of the problems that we encountered
with the original Shibboleth implementation.
What you want is Bodington version 2.4.2 this should be available in the
next day or two on http://sourceforge.net/projects/bodington/ - I thought
the release was there already but it appears not to be.

The Shibboleth origin is in actual use at University of Leeds as part of a
bioinformatics course held jointly with Manchester and Penn State in the US.
