This has been done by several SMRs/HERs using HBSMR, and probably others too. The best solution is to have the contractor working live on your data on-line. This can be perfectly secure, and immediately avoids issues described below, but of course it depends on your IT folk setting things up. Depending on what technology you use (and we would normally recommend Terminal Services with HBSMR), you can share a session with the contractor or observe their session, useful for training and troubleshooting (and keeping an eye on what they are doing to your data!!).
This means no software installations etc for the external contractor, and they can work from virtually any computer anywhere, because all the software would be running on your server.
The alternative is that if you have people working on a divorced copy of your data, in which case you either have to stop editing yourselves during this, or carefully manage a reintegration process. We have done this for a few projects, and it is fine so long as it is carefully planned, but the on-line approach is more elegant.
