Unless a large group of people have replied to you off-list, you do not seem
to have received much response to this enquiry.
I am afraid I cannot help you with the rest of Europe but, as far as
medieval England and Wales are concerned, I would expect the most relevant
sources to be among episcopal records. I am not aware of a large body of
information about excommunication per se (apart from one particular - for
which see below) but, for comparative purposes, you might find it helpful to
search the indexes of the large number of pre-reformation episcopal
registers that have been published in the past 100 years or so. A major
publisher of medieval ecclesiastical records is the Canterbury and York
Society, of which I am treasurer, but a number of local record societies
have also published relevant material.
Details of episcopal registers and their publication is most conveniently
brought together in:
DM Smith, Guide to Bishops' Register of England and Wales: A survey from the
Middle Ages to the Abolition of Episcopacy in 1646 (Royal Historical
Society, 1981)
In celebration of 2004's centenary of the Canterbury and York Society, of
which he is chairman, Professor Smith published, last year, a Supplement to
this Guide, which brings it up to date. This supplement is available for £5
from the Society's Honorary Secretary:

In addition to the surviving ecclesiastical records, the National Archives
class C85: Significations of Excommunication, contains much of interest.
This class, divided by originating ecclesiastical jurisdiction, records
appeals from bishops (and other ecclesiastical personages) to the king to
order his sheriffs to arrest excommunicated persons who have not come to
heel. For more on this class, see:
